I've been thinking about making my mom's rice salad recipe for weeks. I think I'm going to make that happen tomorrow. Maybe you'd like it, too? The quantities are loose; just eyeball it 'til it looks good to you.
Roni's Rice Salad
2 cups cold cooked rice
10 oz frozen peas, defrosted
sliced black or green olives
diced tomatoes
diced yellow onion
chopped scallions (dark green and white)
fresh parsley
Dressing:
1/2 cup olive oil
1/4 to 1/3 cup lemon juice
2 cloves garlic, minced
black pepper
Toss everything together and refrigerate for an hour before devouring. It's great with anything grilled.
Have you watched the series 'Sugar'? It's a noir detective show set in modern LA starring Colin Farrell. Dave and I just finished the first season and really liked it. DON'T READ ANYTHING ABOUT IT if you're curious about watching. There are spoilers everywhere.
Girrrlll… you have to try this mac salad! It’s so much more fresh and flavorful than the mayo-soaked versions I know from the store. I hope you love it!
